Recipe: No-Bake Fudgy Brownie Cups

The perfect healthier snack/treat to make - and they taste amazing!

Ingredients:


For the base:

140g oats

70g almonds or cashews

2 tbsp cocoa powder

Pinch of salt

2 tbsp milk of choice

1 tsp vanilla extract

2 heaped tbsp peanut butter

2 tbsp maple syrup or honey


(if you want to add protein powder replace 2 tbsp of oats with 2 tbsp chocolate protein powder).


Topping

100g dark chocolate

1 tsp coconut oil

Pinch of salt

15g chopped salted peanuts (optional)

Method:


Mix all the dry ingredients for the base in a high-power blender until it resembles a flour consistency. Meanwhile, add the peanut butter and maple syrup or honey to a large microwaveable bowl. Heat in the microwave for approximately 15 seconds and stir with a whisk. Add in the vanilla and milk. Add the dry ingredients and stir with a wooden spoon or spatula until a smooth dough comes together. If it's too dry add a little more milk. Press 1 heaped tablespoon (tbsp) into each mini muffin hole. (you can use a mini ice cream scoop for this). Melt the chocolate and coconut oil in the microwave in 3o second bursts until smooth. Pour onto each and top with peanuts if using and a pinch of salt. Chill in the fridge for a minimum of 2 hours. Enjoy! These can be kept for up to 1 week in the fridge in a sealed container.

Notes: For chocolate, you can use good quality 70% dark. You can replace the peanut butter with almond or cashew butter
